LIGHTENED UP CARROT CAKE CUPCAKES

INGREDIENTS
  • 1 cup Truvia Baking Blend
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups flour
  • 1-1/4 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1-1/2 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon nutmeg
  • 2½ cups finely grated carrots
  • 1 – 8 oz can of crushed pineapple
  • ½ cup raisins
  • ¼ cup shredded coconut
  • ½ cup chopped black walnuts
frosting
  • 8 ounces ⅓ less fat cream cheese, room temperature
  • 1 small box instant vanilla or cheesecake pudding mix
  • 1 cup cold milk
